Wow. Thanks for the quick response. That is very helpful. Now I realize why our old house had shadows. That was the reason I was moving away from the ceiling type.

Great question. Both types are good task lighting options but my preference is recessed in the ceiling.
The reason is that the light dispersion covers a greater area of the countertop. The under cabinet lighting is usually smaller in size and is located under the upper cabinet.
Since the cabinet is only 12" - 13" deep the light is set back from the counters edge where you will generally be working.
Conversely recessed lighting in the ceiling is pulled forward and is larger in size therefore disperses more light. You must be careful of its placement however. If it is moved back to far it will create a shadow on the work space.
Ideally, the light will be placed in the front 12" of the countertop. This will create exceptional task lighting on the work surface without the shadows.
I also love putting them on dimmers and using them as accent light as well.
There is also nothing wrong with having both if you can fit it into your budget. This gives you the maximum in flexibility.
